
- 4 chicken thighs and 4 chicken breasts (divided in half)
- 6 cloves of garlic (minced)
- 1/4 to 1/3 cup cider vinegar
- 1/3 cup dark soy sauce
- 1 cup Coca Cola (8 ounces)
- 2 large bay leaves
- 6 new potatoes (whole, do not peel)
- 1/2 Texas sweet onions (slice in rings)
- 1/2 tsp. oregano leaves
- 2 tbsp. canola oil
- Wash chicken pieces and dry with paper towels.
- Brown meat for about 3 minutes in canola oil.
- When the chicken is a little golden, add onions and brown for 2 minutes.
- Add cider vinegar, bay leaves, soy sauce, oregano, garlic and potatoes; cook for 15 minutes.
- Add the Coca-Cola.
- Continue cooking in a very low flame until chicken is tender.
- Taste and adjust salt to your family’s taste.
- Serve over steamed rice or next to Pancit noodles.
