Arroz Caldo . . . perfect “comfort” food!

3 Tbsp. Olive Oil or Vegetable Oil (for browning chicken)
2 Tbsp. Diced Garlic (I tend to put more)
1/4 Cup Chopped Onion
8   1/2-inch Ginger strips (julienne)
2 to 3-1/2  lbs. Chicken, cut into serving pieces (I use either thighs or chicken wings)
4 Tbsp. Patis (I like to use the “Tiparos” Brand)
