Thanks to Sardonicnell for posting this recipe from Rachel Ray, I was able to make it for dinner tonight. Since I like to find short cuts when cooking, I used baby carrots and cut them into thin matchstick pieces (julienne). . . other than that it was relatively “easy-peasy” to make which is a plus in my book when it comes to cooking. So again, thanks “Nell” for posting this recipe; however, I put more bok choy in the soup because I love bok choy!  (Me familia had something for dinner other than my Trader Joe’s “packaged” food. Ha! Ha! Don’t get me wrong, I love Trader Joe’s!)

  • 1/3 pound angel hair pasta
  • 4 cups beef brooth
  • 1 stalk lemon grass, sliced diagonally
  • 4 cloves of garlic, finely chopped
  • 1 large carrot, shredded or grated
  • 1/2 onion, thinly sliced
  • 1 tablespoon fish sauce
  • 1/2 chilli paste, optional
  • 1/2 pound beef, sliced thinly
  • 1/2 cup of cilantro
  • 4 stalks of baby bokchoy
  • 2 limes

In a medium pot of boiling salted water, cook the pasta until al dente, about 2 minutes. Drain and divide among four (4) bowls.

In the same pot, combine the beef broth, lemon grass and garlic, bring to a boil. Lower the heat and simmer for fifteen (15) minutes.

Add the carrots, onion, baby bokchoy, fish sauce and chilli paste. Return the soup to a boil, add the beef, then divide the soup among four (4) bowls. Garnish with the cilantro and lime wedges.

msic-004.jpglast Friday night, Jack and I went to Juanita’s Mexican Restaurant for some appetizers, but the main reason was to order some strawberry margaritas. They must have ran out of margarita glasses because when our drinks came, they came in those daiquiri type glasses. The drinks lacked “tequilla!” Maybe another 1/2 a shot of tequila would have given it a little “BAM!” When Jack said it wasn’t “strong” enough, I knew that it wasn’t strong at all. 🙂 Well, we still guzzled it down and enjoyed our giganto appetizer sampler. It was a nice evening with Jack . . . did the “Town Center” thing prior. We headed back to pick up our gurls. Their school held a special dance where they got to see many of their classmates from last year and other schools.msic-006.jpg

after our meeting with Father NG yesterday evening, Jack, SM, RA and I finally got to try Barcardi Silver’s Mojito drink. I had misc-076.jpgemailed the gurls earlier in the day telling them that if I/we didn’t have to meet with Father N that evening, I would have gone to BevMo to buy the Mojito drinks right after work. Luckily, SM read her email and had her hubby take her to BevMo after work just to buy them. (Little did he know they were going to get consumed that evening as he thought they were for the weekend.) When I got to the church’s parking lot, SM opens up the BevMo bag and viola . . . the Bacardi Silver Mojitos! I was ecstatic . . as silly as that may sound. Well, I’ve been wanting to try the “mojito” flavored ones ever since I found out about them. I still prefer the “real” mojitos and the regular Bacardi Silvers, but at least I know now how they taste. BTW . . . us “gurls” will be taking over the Baptismal Ministry at church. 🙂 Do we know how to have fun after the meeting . . . . and unplanned at that! Heck yeah! After the meeting, RA and I went with Jack and SM to the Parent Club Meeting as they still had Lil’ Jack and OM in middle school. I am so fricken glad that I am over that . . . no more Parent Club Meetings to attend to anymore . . . I think 12 years is enough. All I have to say is having two kiddies in high school is soooo different. Getting back to “being bad” . . . we couldn’t just drink the mojitos by itself so we hopped in Jack’s SUV and went up the hill to Safeway to buy the chips. . . . drove back down and parked inside the church’s parking lot where we consumed our alcoholic beverages and ate our chips. Just when our “giddiness” was getting out of control, Jack sees Bean, JB and Father KH coming our way. We quickly put our drinks down and rush out the door to greet them. Bean already knew our plan so she wasn’t surprised one bit. We chatted with them in the parking lot . . . by then JB and Father KH already caught on as to what we were doing. Basically, we were “gurls just wanting to have some fun.” It’s not like we were doing something “really” bad.  After consuming our alcoholic beverage (notice the word “beverage” is singular . . . meaning we only had one bottle each) along with the Kettle brand potato chips, we got inside our own car and went home.   I got home a little bit past 10:00 p.m. . . . after being gone for 3 hours.  (Before I left, I made sure the familia had dinner ready which is something I always make sure to have especially when I have meetings.)  I even called Bean to tell her I was home.

food-001.jpgMc Donald’s® premium “iced-coffee”! I’ve been hooked on this bad boy for weeks now and finally I’ve “mastered” the art of “ordering it my way” . . . meaning only 3 pumps of “hazelnut” flavor (large cup) vs. the regular 6 pumps. I found it way too sweet and too over-powering for my taste, so I had them only cut it back to 3 pumps of hazelnut flavor. These iced-coffees come in 3 flavors: 1) regular 2) vanilla and 3) hazelnut. Being such a “pig” that I am, even if I’m by myself, I still always order their large 32 oz. size only because it’s only 10 cents or 20 cents more than their medium 24 oz. I know some will snub the thought of coffee at food-004.jpgMickey D’s, let alone their “iced-coffee,” but heck . . . you can’t beat the price! I won’t make any comparison to Starbuck’s 0r Peet’s because they’re in their own league, but I will continue to order my iced-coffee at Mickey D’s whenever I have a craving for it, especially if there is a Mickey D’s nearby. 🙂 Another “new” found obsession is their cinnamon melt. My bad! For some reason, the iced-coffee and the cinnamon melt go “together!” Oink! And the best part . . . for a large iced-coffee and an order of cinnamon melt is only $3.80. 🙂  P.S.  The cinnamon rolls at Cinnabons and even RS are still my favorites, but like with the iced-coffee, you can’t beat the price for $1.59!

img_3565.jpgYup . . . like I said many a times, being the “queen” of BOGOF coupon, after our trip to Trader’s and Petco, we made a quick detour to Peet’s on our way home. Parking was such a you know what around Park Street in Alameda around that time, I even wondered if it was all worth it. . . but being such a persistent person that I am, I was determined to find parking. I know we’ve must have gone around and around numerous time, but we did find parking after all. AC held Toby outside while I ordered our drinks. She had their chocolate caramel swirl freddo and I had to try their matcha green tea freddo. I have to admit that in comparison to Starbucks, Peet’s “green tea” freddo has more of a green tea taste to it. I have several more coupons before they expire on July 2nd, so most likely I’ll be back for more! [OK… gotta get ready for work now.  I also baked a lemon cake for work this morning so I could smell the aroma throughout the house . . . llove that “baked” smell . . .  and Kel . . . I will bake you this one next time! :-)]

freddo1.jpg When it comes to practically anything “buy one, get one free,” I’m there waiting in line! Peet’s Coffee has a special promotion going on with their freddo drinks through Monday. With the offer that I had printed out via the internet, the hubs and I went to Peet’s this afternoon to get our “freebie.” The hubs isn’t too crazy about chocolate so from the two flavors below, I’m sure you’ll know which was the hubs’ freddo . . .
